- 1 pound of beyond beef (it’s not beef) You can use any type of ground meat if you don’t want to make it vegetarian. See below for the picture of beyond beef.
- 4 zucchini cut in half lengthwise and empty the seed
- 1/2 cup of grated Asiago cheese (you can also change it for any other cheese or a vegan cheese)
- 2 tbsp chopped sun dry tomato
- 2 tbsp pine nuts (I used chopped pumpkin seed)
- 2 green onions chopped
- 1 garlic clove minced
- 1 tbsp of Italian herbs
- Salt and pepper
Instructions
Preheat oven at 400f. Clean and cut zucchini lengthwise then empty the middle to make place for stuffing. Heat butter or oil in a pan then sauté onion and garlic for 2 minutes. Add the ground meat and sauté for 5 minutes then mix all of the other ingredients. Stuffed The zucchini then cook in the oven for 15 min. It’s delicious 😋
